Mixed Berry Brownies

Toddler Dish
I devised these as a way to sneak more fruit into my
daughter’s diet. They are delicious!
1 ½ c. frozen mixed berries
2 oz. unsweetened chocolate
1 ½ c. sugar
2 eggs
1 t. vanilla
¼ t. salt
1 t. baking powder
¼ c. cocoa powder
1 c. flour
Preheat oven to 350°.
Grease an 8x8 baking pan with butter or margarine.
Puree mixed berries in a food processor, then heat in a
small saucepan until warmed. In another saucepan,
melt chocolate over low heat. Stir in berries (strain to
remove the seeds if desired) and sugar, stirring until
thoroughly combined. Remove from heat.
In a large mixing bowl, combine chocolate mixture, eggs,
vanilla, baking powder, cocoa powder, and flour. Stir
until combined.
Pour into pan and bake for 30 minutes, or until a
toothpick inserted in the center comes out almost clean.
