Broccoli Casserole

This is a good way to sneak in some of those veggies!
1 - 10oz. package frozen chopped broccoli
1 c. uncooked brown rice
1 T. olive oil
½ t. salt
2 c. water
1 T. butter
1 T. flour
1½ c. milk
¾ c. shredded cheddar cheese, plus additional for
topping
Salt and pepper
Preheat oven to 350°
Thaw broccoli according to package directions.
In a medium saucepan, combine brown rice, olive oil,
water, and salt. Bring to a boil, then reduce heat and
cover, simmering for 40 minutes or until tender.
In another medium saucepan, melt the butter over
medium heat. Add the flour and stir until well combined.
Stir in the milk. Continue to cook, stirring constantly,
until thickened and bubbly. Add the cheddar cheese
and stir until combined. Remove from heat, and add
salt and pepper to taste.
In a large bowl, combine the cheese sauce, rice, and
broccoli. Spoon into a casserole dish and sprinkle with
shredded cheddar cheese. Bake for 20-30 minutes,
until bubbly.
Serves 4
