Crispy Baked Chicken

This one is a favorite of my husband and my daughter -
both very picky eaters!


1 lb boneless skinless chicken tenders
1 egg, beaten
¼ c. milk
¼ t. salt
1/8 c. flour
2 c. crispy rice cereal


Preheat oven to 400°.

Spray a shallow baking pan with nonstick spray.

Trim fat and tendons from chicken.  Mix the egg, milk,
and salt in a shallow bowl or dish.  Place the flour in
another dish, and place the crispy rice cereal in a third
dish.

One at a time, dip the chicken tenders into the flour,
then the egg mixture, and finally the cereal.  Make sure
they are well coated.  Place on the baking pan and cook
for about 20 minutes, or until no longer pink.

Serves 4.
