Mock Mashed Potatoes

Cauliflower makes a healthy substitute for mashed
potatoes!  It's a good source of vitamin C, folate, and
dietary fiber.


1 head cauliflower
½ T. butter or margarine
Salt and pepper


Chop the cauliflower into small (about 1 inch) pieces.  
Place in a steamer basket over boiling water.  Cover
and steam for about 15-20 minutes, until very tender.  

Place the cooked cauliflower into a food processor, and
process for a few seconds, until smooth.

Stir in butter or margarine, and add salt and pepper to
taste.


Variation:  Make loaded mock mashed potatoes by
adding shredded cheese, chives, bacon bits (or veggie
bacon bits), sour cream, etc.


Serves 4 as a side dish.
