Quick & Easy Tofu

My daughter loves this (and so do I.) This is a good
introduction to tofu, for those who have never tried it. .
1 T. olive oil
1 block firm or extra-firm tofu (not silken), drained
1-2 T. tamari (aged soy sauce)
Slice the tofu into small cubes or strips and layer on
paper towels to remove excess water (I usually buy
pre-cubed tofu to save time). Heat the olive oil in a
skillet over medium-low heat. Add the tofu cubes and
tamari (using more or less to suit your taste), stirring
often, until golden-brown (about 15 minutes).
Serves 2-3.
