Rubye's Sweet Potato Casserole

My grandmother's sweet potato casserole is a must-have
at all family gatherings. There are never any leftovers!
Casserole:
3-4 medium sweet potatoes
½ c. brown sugar
3 eggs
1 t. vanilla
½ stick butter
½ c. milk
½ t. salt
Topping:
1 c. brown sugar
½ c. flour
½ stick butter
1 c. chopped pecans or walnuts
Preheat oven to 350°
Wash sweet potatoes. Bake on a shallow baking pan
for about 1 hour or until tender (check doneness by
piercing with a fork).
Slice sweet potatoes open with a knife and scoop out
the flesh. Discard skins. Combine in a large bowl with
brown sugar, eggs, vanilla, butter, milk, and salt. Mix
well. Spoon mixture into a 2 qt. rectangular casserole
dish.
For topping - In a small mixing bowl, mix the brown
sugar, flour, and butter together with a fork. Stir in nuts
if desired. Sprinkle over top of sweet potato mixture.
Bake at 350° for 30 minutes.
